All beef (Back leg, thigh, shoulder). Male cows only as a tradition. Boned, fat and skin removed. Seasoned with secret spice mix. Air dry under the natural air and warm sunlight. Cook meat with fat.

Steamed in pot with salt and served with cumin.

Stuff with liver, coriander, cilantro, garlic, onion, bell pepper: yellow, red, green bell pepper, zucchini, cabbage. Bake with cumin pâprika, salt, chilli, dried coriander, ground garlic.
